Warm Mushroom and Goat Cheese Salad

6 cups mixed baby salad greens 
¼ cup extra-virgin olive oil
1 order (400gr) Ministry of Mushrooms ready-to-cook Volvariella (Chopped)
2 packs (250gr) Ministry of Mushrooms Fresh Oyster Mushrooms
¼  cup pine nuts
2 large shallots (chopped) 
3 tbsp sherry  or raspberry vinegar 
1 tsp sugar
1 tsp salt
¼  tsp ground black pepper 
¾ cup crumbled goat cheese
*Replace goat cheese with no-rennet cheese for a vegetarian option

In large skillet, heat olive oil over high heat and add the chopped Ministry of Mushrooms ready-to-cook Volvariella and cook for 5 minutes. Add Ministry of Mushrooms fresh oyster mushrooms, pine nuts and shallots and cook for 2 minutes. Remove from heat and stir in the vinegar, sugar, salt and pepper until well mixed. Divide mixture and the cheese over the greens or serve separately.
