Red Bean and Oyster Mushroom Dip

1½ cup sweet red beans (same used in Halo halo)
375gr packs of Ministry of Mushrooms Fresh Oyster Mushrooms
1 medium sized onion chopped finely
4 whole cloves of garlic
1 tbsp thyme
1 lemon or lime (with zest)
½ cup  sour cream
½ cup natural or Greek yoghurt
olive oil
salt and pepper

Cook beans until soft and easily mashed. While cooking the beans, prepare the mushrooms. Chop 3 cloves of garlic and saute with the onion and 3 tablespoons of olive oil in a non-stick pan.  Do this on low heat and stir occasionally until they are they are soft and more translucent. Add the mushrooms and thyme. Season with salt and pepper and stir occasionally until the mushrooms are softer. (Takes about 10 minutes) When the mushrooms and the beans are cooked, place them into the food processor or blender. Add a little yoghurt, sour cream, a little olive oil and salt and blend. Keep adding sour cream, yoghurt and olive oil until you get the consistency and taste you want. Then at the last step, add one whole clove of garlic and the lemon/lime juice, with a some zest (this gives it the kick the dip needs). You can enjoy this dip like hummus, with crackers, crudite, and bread!
