Mushroom & Chicken Yakitori

3 packs (450gr) Ministry of Mushrooms Fresh Volvariella
1/4 cup dark soy sauce
2 tbsp mirin
1 tbsp finely grated ginger
2 tbsp white sugar
½ tsp ground white pepper
2 tbsp sake or sweet sherry
500gr chicken thigh fillets, (cut into bite-size)
2 medium sized onions (cut into bite-size)

Combine the soy sauce, mirin, sake or sherry, sugar, ginger and pepper in a saucepan over medium heat and bring to a simmer. Simmer and stir occasionally until the marinade is slightly thickened the set aside to cool. Marinate the mushrooms and chicken separately and keep in the fridge for 2 hours. Place pieces of onions, chicken, and mushrooms onto the skewers or mini barbeque sticks onto skewers. Cook over medium flamed barbeque grill until chicken is cooked. Baste with marinade to keep juicy.
