Ministry of Mushrooms Crumbed Volvariella

3 packs (450gr) Ministry of Mushrooms Fresh Volvariella
3 eggs (beaten)
3 cups fresh light breadcrumbs
1 cup corn flour
½ cup fresh flat-leaf parsley
2 tbsp fresh chives
Salt and pepper to taste


On a shallow plate, mix the breadcrumbs, parsley, chives salt and pepper. Place breadcrumbs and corn flour on separate shallow plates. Coat the mushrooms piece by piece in flour, then dip in the egg, then coat with breadcrumbs – then set aside. Heat the oil for frying in a medium skillet or saucepan. Deep-fry the crumbed mushrooms, in batches for a minute each batch. Remove and set aside to drain on paper towel. Serve with fresh lemon and aioli.
