Coq Au Vin

3 packs (450gr) Ministry of Mushrooms Fresh Volvariella
(or 1 order (400gr) Ministry of Mushrooms Freshly made ready-to-cook Volvariella)
4 boneless, skinless chicken breast halves
½ cup chopped bacon
300gr baby carrots
1 cup diced white onion
¼ cup flour
1 tsp thyme
½ tsp salt
¼ tsp ground black pepper
¼ tsp sugar
2 cups dry red wine
3 tbsp olive oil

In large skillet, over high heat, cook bacon, carrots and onion until tender then set aside. Add 1 tbsp olive oil and brown the chicken for 3 minutes on each side. Put back the bacon, carrot, and onion mix. Stir in flour, thyme, salt, pepper, sugar and the remaining olive oil until well mixed. Pour in wine and bring to a boil. Once boiling reduce the heat, cover and simmer 15 for minutes. Stir in mushrooms, cover and cook 15 minutes, stirring occasionally.
